I'm sure I heard somewhere about the 101st removing the eagles when they were holding out in Bastogne to prevent the Germans from knowing they were up against elite troops. Though I can't find any reference to it ATM.

Why would they want to prevent the Germans knowing that? Seems like something you'd promote in order to frighten the enemy.

British commandos on 'the line' did the same, for the same reason.
Why that works? I dunno, though I would imagine that the boot quakeing effect of the enemy knowing they face an 'elite' unit is much less then the effect of them not knowing the disposion of your forces in general.

Or make the Germans more determined to wipe them out. Regular army would be more likely to have heavy weapons than paratroopers.

I thought that was because of Hitler's "Commando Order".
Think he meant that regular Infantry regiments would have been more equipped, whereas paratroopers are traditionally lighter on their feet as in carrying capacity.

Could have something do with if the enemy knows they're up against elite units they will give them extra attention in softening them up before attacking. No man wants to be on the recieving end of more artillery than he has to be.

Just one thing, I don't own para boots since they will cost me at least 100 quids (repro, not Corcoran). Can I wear Doc Martens boots instead?
They'll look similar, but not spot on. At the end of the day, make do with what you have until you get the proper stuff. Corcorans are hard to get hold of these days unfortunately, I find repros don't look the same as proper ones... but hey ho.
